…it’s not totally awful!
I made this barley risotto at the end of last week, and used the dregs of everything left in the fridge and some things out of the freezer. Last week, that was spinach, mushrooms, peas, and caramelized onions (yeah, it was looking pretty bare).
Halfway through cooking, I was 100% convinced I would be writing this as a food fail post. Basically, I didn’t think it through at all and cooked the mushrooms in cumin and dried chilli peppers. Which don’t really go with caramelized onions and peas. Luckily, though more than a bit odd, it tasted surprisingly good.
Nevertheless, I’ll think about it for more than 20 seconds next time I throw together everything left in the fridge.
